Sourdough Apple Upside Down Pancake Recipe

Description
I kind of ended up inventing my own that used less water than the recipe I found online. That was because I had already mixed the biga the night before and used all water.
Ingredients
- 1 Sourdough Biga
- 1/4 cup milk
- 1/2 cup oil or butter
- 1 tbs sugar
- 1 tsp salt
- 1 tsp baking powder
- 2-3 apples, peeled and sliced thin
- 1 tbs butter for sautéing apples
Recipe
1. Preheat oven to 450°
2. Take biga from night before and add all wet and dry ingredients except baking powder and mix well
3. Peel and slice apples thin, melt slug of butter in cast-iron skillet and sauté apples until browning just begins
4. Sprinkle baking powder over batter and whisk well
5. Make sure apples are spread in single layer at bottom of pan, and pour batter over apples
6. Bake for 15 minutes or until top is nicely browned
7. Invert onto serving plate or tray and slice to serve
