Marking this as closed because I've moved back to linux for desktop. So many things just work now. Whew.
Once FreeBSD 12.x makes the jump to sndio 1.7.0 I can use the fallback configuration to fall back to alternate audio (like USB)
Here, -F tells sndio to fallback to the 0th snd device as listed by `cat /dev/sndstat`
