Levain

Ingredients

- 1/2 - 3/4 cup sourdough starter or some of today's levain

- 2 cups bread flour (or any other glutenous flour)

- 1 1/3 cup lukewarm water

Well before baking with it (preferably overnight) mix together flour, water and starter. Whisk well to incorporate air.
